Southwest Tofu Scramble

Compassion begins on your plate!

I genuinely do not miss eggs as a vegan, and a major reason is that I’ve experimented and perfected my favorite vegan breakfasts. I am often asked how I cook my tofu scramble, and after lots of trial and error, I wanted to share my favorite recipe and cooking process that I’ve developed. I hope you enjoy this as much as I do!

You will need (serves two):

1 package organic, sprouted extra firm tofu

1 tbsp garlic granules*

2 tbsp turmeric

2 tbsp nutritional yeast

2 chopped basil leaves

1 dollop of your favorite salsa

1 organic avocado

2 organic golden potatoes

1/2 organic white onion

1 package of washed organic spinach

Wildbrine Kimchi Probiotic Sriracha*

Celtic Sea Salt*

Ground black pepper*
*Proportions can be modified to taste.

🌱Preheat oven to 400 degrees.

🌱Slice potatoes into circles. In bowl, evenly toss potatoes in salt and pepper.

🌱Place sliced potatoes on cookie sheet, and cook on top shelf in oven until golden brown. (Cook times may vary per oven.)

🌱Slice tofu package.

🌱Pour “tofu guts” into a medium saucepan. Crumble extra firm tofu and place in the pan, turning on medium heat.

🌱Add turmeric, garlic granules, basil, nutritional yeast, salt and pepper to pan.

🌱Stir as needed.

🌱Once “tofu guts” water has started to cook away, add a dollop of salsa to the scramble mix.

🌱Slice onion. Add to sauce pan with a little water. Cook over medium heat until onions start to caramelize. Add spinach, and top with salt and pepper.

🌱Cut avocado in half. Spoon out green avocado onto a cutting board. Sprinkle pepper. Cut into slices.

🌱Pour finished tofu into two bowls. Add spinach and onion mixture divided evenly to both bowls. Dress with slices of potato, avocado slices, and finish with Kimchi Sriracha.  I love this Sriracha since it tastes amazing, and adds probiotics to any meal to help aid with digestion and support immunity.

🌱💚And, voila! You have mastered the tofu scramble. 🙌🏼💚🌱

Crossroads All Lead Home

Shifts and fluctuations in our surroundings is a part of life. Life is ever changing, ever expanding. Some people grow together, some grow apart. But the truth is, even if you are disappointed in who stays or who leaves, it’s all there for a reason. It’s all about resonance. Someone will vibe with you for one part of the journey, and then something shifts and they are vibing somewhere else. The right doors will open and close for you as a result of your vibration. You are attracting every crossroad for your highest good.

Always remember that those who leave never really left. We carry pieces of everyone we have ever brought into our awareness. It is up to us to transmute these experiences, as they are always within us. Everyone carries a piece of you with them. Everything you experience and everyone you meet is always within you as well. This truth is that everything is limitless and infinitely connected to everything else. Separation is an illusion. There is only one all-that-is, always. 💫✌🏼

The Human Connection

From the moment we are born, our hearts seem to beat for others. We all have significant people in our lives who have influenced us greatly, beyond any doubt. We are undoubtedly connected to others on a soul level. Whether someone is there for a minute, a month, or years, there are certain people who seem destined to touch our lives. This connectivity is never severed.

With connection in mind, it is so important to understand how our internal thoughts and feelings affect the collective. When we become stressed, and project fears out onto the world, we seem to attract the very circumstances we don’t want. When we become peaceful, and project feelings of love and peace out onto the world, we feel more of this peace back. It’s important to take inventory of the vibes you are sending to others. We are all so connected, beyond human understanding, that we are able to bring out the worst or best in people when we decide to bring out the worst or best in ourselves.

Overnight Gingerbread Chia Pudding

Chia is an ancient Mayan word for strength. Introducing it into my diet has helped my hunger and stamina exponentially. It’s a good source of protein, fiber, calcium and omega-3. Eating chia puddings have become a staple for me on days I’m losing weight and feeling motivated to work out. My favorite cookie is definitely my mom’s gingerbread so combining her spices with chia pudding seemed like a perfect fit to satisfy my sweet tooth in a healthy way.

You’ll need:

4 tablespoons black chia seeds

1 cup coconut milk

1 tablespoon vanilla extract

1 teaspoon* of cinnamon

A dash* of ginger

A dash* of clove

*Can be increased with preference.

Combine ingredients in Tupperware bowl and leave in fridge overnight. If you would like to make more for the week, just keep the ratio of 4 tablespoons per cup of coconut milk in mind.

In the morning, enjoy a healthful, yummy gingerbread chia pudding !

The Self-Love Transformation

Taking a moment to reflect on my weight loss journey tonight, I am appreciating where I am at. Many people are surprised when I tell them I’ve never actually set a goal weight. In fact, I only recently even bought a scale and that was due to being interviewed about my weight loss. I just wanted to be able to speak about my weight with certainty. Even now, though many people acknowledge I have a ways to go or more weight to lose, I still don’t really have an end goal.

Dr. Wayne Dyer was a brilliant man, whose life’s work has affected my own greatly. He once said that, “Deficiency motivation doesn’t work. It will lead to a life-long pursuit of try to fix me. Learn to appreciate what you have and where and who you are.” This resonated with me on a deep level.

When you focus on lack, you experience more of it. I don’t want to spend my life being someone who focuses on fixing all of the perceived problems I may or may not even have. When I stopped focusing on my weight problem, I stopped having a weight problem. My weight loss has truly happened out of self-love. I wake up everyday and try to do better for myself. I became discerning in all areas of my life: from food, to the people I allow around me, to how I occupy my time, to the thoughts that flow through my mind. I choose what’s best for me in that moment. I eat plants that’ll make me feel good and motivated to be active, versus processed food that makes me feel like crap. I let go of people who cut me down (even if it’s a joke, it’s never nice) and hang around the ones that build good vibes with me. I meditate instead of focusing on the thoughts that stress me out. It’s really been simple. Enough time has passed that physically, I’ve drastically changed from who I was even a year ago.

Even now, standing at a hundred pounds lighter, there are people who can only see what I have yet to lose, focusing on lack. I don’t listen to them. I focus on what I’ve gained, what I’ve accomplished, and how amazing the human body really is. When you focus on loving who you are in this moment, everything changes. When you stop listening to the people who don’t believe in you, you start to believe in yourself. This mentality and way of life has opened doors I only dreamed of. The more you focus on being love, which is your true, authentic self, the physical transformation will also become evident.

Compassion Begins on Your Plate: How Plant-Based Eating Can Transform Your World

As a child, I basically ate whatever my parents decided to put in front of me. Until one day, I started questioning the choices of my parents. I was 14 years old when my dad’s side of the family all decided to be on the Atkin’s diet. I watched my dad order a beef burger without the bun, eat as much bacon and sausage as he wanted for breakfast, not eating many vegetables and completely cutting out carbs. Being someone who never particularly enjoyed eating tons of meat, I was repulsed by it. I called it the “flesh” diet. I declared I was a vegetarian and started preparing my own dinners. I didn’t really know how to be a healthy vegetarian, I just knew I didn’t want to contribute to the killing of animals. Once I researched documentaries like “Kentucky Fried Cruelty”, and saw the brutal treatment of animals in factory farms, there was no turning back. I often ate pasta drenched in garlic and olive oil, or omlettes covered in cheese. It wouldn’t be until years later that I truly would make the connection between food as medicine and vitality.

Back then I never could have imagined cutting out eggs and dairy. It took me seeing years later that it’s common practice that male chicks are ground up alive and baby calves are taken from their moms and slaughtered for veal- that there is no humane treatment of animals in any food industry. We are exploiting the most innocent beings on this planet by giving them a life of misery. This connection started making me think about energy in food and focusing on sourcing food that is “cruelty free”. If everything is energy, why would you ever want to consume a product sourced from an animal who lived in misery? It made me question how much negativity we bring into our own lives by absorbing that which we create from these tortured animals.

It wasn’t until I started working at Whole Foods Market did I really put the idea into practice. I set out to eat the highest energy, nutrient-dense foods. I finally learned how to not only eat compassionately for the planet, but also how to eat compassionately for myself. I took E3-Live, a super nutrient-dense algae high in 65 vitamins, minerals and amino acids, every morning with my orange juice. I ate chia pods on my breaks instead of bagels and cream cheese. I often grabbed organic pink lady apples, bananas, and cashews if I was hungry. I always had Lara bars on me, and drank chia kombuchas. If I was craving cheese, I bought cashew cheese and gluten-free crackers. I replaced my morning omlettes with my now favorite dish: the tofu scramble. I often ate at the salad bar, but mixed an avocado from produce with lemon juice over my greens instead of dressing. This diet gave me so much energy I had no problem working out for a couple hours after an 8 hour shift.

I was over 300 lbs when I first started working at Whole Foods. This change to a plant-based diet combined with regularly working out led me to drop over 90 lbs over the past year and a half. Little steps and daily decisions from the heart has led to a huge transformation in my life. It’s been less about the end goal, and more about how to make a loving decision towards myself and the planet in the moment. The weight has fallen off in the process. Every day we have choices to make. Every day we have the ability to channel love and light into every decision we make. It’s our little choices over time that lead to life-changing transformations. I truly believe compassion begins on your plate. What we decide to eat can literally transform our world: from our bodies, to our energy levels, to our environment.

Trusting the Universe

We all experience doubts and fears to some degree. The key is to not let these thoughts steer your life. Let them go as if you never had ownership of them. It’s about listening for your higher self, your loving knowing that things are all a part of divine timing, and a bigger picture. This is when we must give up our need to plan and schedule and have an agenda to that of the divine. Trusting that there is some source of divine loving energy that always has your back is key to manifesting exactly what you need.

Doors open and close and it’s important to understand that rejection and redirection is divine protection. Everything has it’s timing. Patience is key to manifesting your dreams. Let go and see what flows your way.

The Holistic, Spiritual Legacy of Lisa “Left Eye” Lopes

Yesterday, I was flowing, completely in my element. There were so many passionate conversations throughout the day about coincidences, energy, and disease related to diet 100%. A coworker brought up Dr. Sebi’s life and research, a holistic African man in Honduras who practiced medicine without a license, who was tried in court for fraud and won his case based on countless case studies of cured people.

From there, I went down a rabbit hole regarding his patient Lisa Left Eye Lopes. Her name instantly caught my eye. My childhood friends could tell you I knew every line of her parts in TLC. My mom took me to Harmony House in second grade and let me pick out any CD I wanted for my first CD. I fell in love with two: Gershwin’s “Crazy for You” and “Crazy, Sexy, Cool” by TLC.

I started researching Lisa’s death circumstances. Right before her death, she decided to use her fame to speak about holistic healing and how she cured her herpes naturally just following an herbal, plant-based diet and doing energy work. Her freak car accident has an element of conspiracy. It was a complete coincidence that she’s been on my mind the last 24 hours, and it just so happened to be her 15 year anniversary of her death today (😱 nuts, right?!). As many of you know, I don’t believe in mere coincidences. I agree with Einstein when he said coincidence is God’s way of remaining anonymous. Her message is extremely timely and beautiful. Her views on death parallel my own based on my own experiences.

In memory of Lisa, I just wanted to dedicate all of my social media to her message. May it inspire others like it inspires me. And also, even if there is a conspiracy surrounding her death ( because you know nature curing humans doesn’t make others money), she definitely had a mission and I definitely feel she fulfilled her purpose. Sending so much love to you all. Maybe I’m crazy… But I’m also sexy and cool. 😂😉💗💗💗💗✨✨✨✨

When the Unthinkable Happens: 5 Lessons from the Afterlife

Hearing about the death of a family member has triggered some deep reflection today. I think back to losing my dad, and how painful the funeral and family drama really was for me and my sibling. Dealing with a close death was probably one of the hardest things I’ve ever had to go through, and I did it at such a young age. At the same time, it has taught me so much more about myself, existence, and divine timing than I could have ever imagined. It’s easy when something traumatic happens in this third dimensional reality to focus on the physical absence. What’s beautiful has been to see my dad reach out to us through undeniable signs, famous mediums, and not-so-famous intuitives during the passed eight years. I chronicle these life changing experiences in my upcoming book.

There are a few life and afterlife lessons I have learned definitively that I want to share with those who are grieving today:

1. Death is completely physical. Consciousness survives the physical death of the body. I received confirmation upon confirmation of this fact. One of the most hair raising moments was when it sounded like my dad’s voice and personality was literally coming through Theresa Caputo, TLC’s The Long Island Medium. Furthermore, modern science is also explaining death is an illusion through quantum physics.

2. While no one ever really dies, their perspective changes to a metaphysical perspective. They no longer see existence from this third dimensional, human experience. Having this new bird’s eye view enables our loved ones to watch over us and work with angels to bring us signs, serving a new purpose in our lives as guardian angels.

3. No matter how abrupt or untimely the death of someone seems, all death is on divine time. Awakening to this fact requires faith and trust. Like all experiences in life, we have the free will choice to let the experience tear us apart or make us stronger than ever. Making positive interpretations of death brings us to the highest perspective, inviting the miraculous into our lives.

4. Speaking with our deceased loved ones is only a mental phone call away. While I didn’t always get an immediate reply, my dad always heard me and found ways to answer my questions. Know that they do see us, hear us, and know what we are going through.

5. Our loved ones find their loved ones who have passed on the other side. No one is ever really alone and separation is an illusion. One of the first things my dad let me know is that he found his brother, which I wrote about how I came to know this years ago in my blog post “All Gays Go to Heaven“.

These lessons have been learned through a lot of tears, and a lot of healing. My heart goes out to everyone going through losing a loved one. My intention is to share my experiences with the hope it brings comfort to those who feel lost. No one ever really dies, and death is not the end, just a doorway. We all eventually walk through that door. Love shared is eternal, and you will meet again.
